We started Zero Junk after realising most “healthy” condiments still hide seed oils, sugars and additives. As a chef + nutritionist duo, we rebuilt mayo from the ground up with Simply Real Ingredients: 100% avocado oil, free-range eggs, Dijon mustard, organic apple cider vinegar, fresh lemon and Himalayan salt. Then packed it in recyclable glass. Friends raved, tastings snowballed, and early feedback from local shops/markets told us we were onto something great.

How We Make Our Mayo

Simply Real Ingredients. Simply Done Right.

  • Step 1 — Source: 100% avocado oil, free-range eggs, Dijon mustard, organic apple cider
    vinegar, fresh lemon juice, Himalayan salt.
  • Step 2 — Prep: Grind/blend Dijon in-house, measure ingredients for batch consistency.
  • Step 3 — Emulsify: Slow, steady stream of avocado oil while whisking/blending — no thickeners, no fillers.
  • Step 4 — Season & Taste: Brightened with lemon and a pinch of mineral salt.
  • Step 5 — Jar: Filled into recyclable glass with metal lids, labelled by hand in small batches.
  • Step 6 — Chill & Deliver: Kept refrigerated from our kitchen to yours.

What are the ingredients?

Simply 6: 100% avocado oil, free-range egg, Dijon mustard, organic apple cider vinegar, lemon juice, Himalayan salt.

How should I store the mayo?

Always keep refrigerated. After opening, store the jar in the fridge door (the slightly warmer zone) to avoid over-thickening or splitting. Aim for fridge temperature around 4 °C or a bit above. Avoid very cold back/bottom shelves. Natural separation can occur — stir before use.

How long does it last?

Because we add no preservatives, we recommend: Unopened (refrigerated): best within 4 weeks. After opening: best within 2–3 weeks. Always use a clean utensil and reseal promptly.

Is your mayo gluten-free / Keto / Paleo?

Yes — our recipe contains no gluten-containing ingredients and fits Keto and Paleo approaches. (Contains egg and mustard.)

Does your mayo contain sugar, preservatives or seed/“vegetable” oils?

No sugar. No preservatives or fillers. No seed/vegetable oils — our mayo is made with 100% avocado oil.

Are your jars recyclable?

Yes — recyclable glass jar and metal lid. Please rinse and recycle (or upcycle) after use.

Will you add more products?
